La produzione del vino a Marsiliana d’Albegna (Manciano, GR): una proposta sperimentale dal record archeologico.
Abstract
While classical sources and archaeological data provide much information on the operational chain of wine in the Early-Imperial period and after, our knowledge on the Protohistoric and pre-Roman periods is still scarce. The excavation of the Casa delle Anfore site at Marsiliana dÕAlbegna (Manciano), such as the development of the ArcheoVino Project at Scansano (2006 onwards), allowed us to increase the evidence on the production technology of wine in the Etruscan era. The analysis of large dolia recovered from Casa delle Anfore brought to the identification of organic residues compatible with wine and traces of a waterproofing based on Pinaceae pitch, suggesting a production technology like the Roman one. An interdisciplinary collaboration has thus arisen to develop reliable protocols for the creation of a wine compatible with that produced in the Etruscan period. We report here data from the Þrst phase of the experimental work, which involved the pressing, fermentation and aging of Sangiovese grapes in containers reproducing Etruscan vascular shapes, made with clay pastes compatible with those of the original jugs and waterproofed using Pinaceae pitch.
